Kale and Quinoa Salad

Quick, easy, and only a few ingredients, everyone’s ideal recipe :). If you are’t stocking your pantry already with quinoa, you should be. A whole grain that is easy to find at the store, a good source of protein, fiber and relatively inexpensive. Also, quinoa cooks really quickly, which is a bonus in my book. I have found entire blogs dedicated to quinoa, and frankly I just can’t seem to get tired of cooking with this stuff.

 

 

 

 

 

This recipe is good served warm or chilled. Eat it as a main dish or served on the side. This would also be great for a summer picnic!

Ingredients:
1.5c Water
1 serving of bullion
Quinoa ¾ cups – rinsed
2T Olive oil
Quinoa ¾ cups – rinsed
4 cups of Kale, chopped – remove any hard stems
3 cloves garlic, minced
¼ tsp. black pepper
Pinch of chili flakes if you want a little extra spice
2T Soy

Directions:

  1. In a medium saucepan add the water and bullion cube. Rinse the quinoa and add it to the water. Simmer the quinoa on medium heat-low heat, with a lid for 10 miuntes.
  2. While the quinoa is cooking, in the separate pan add oil, and onion to caramelize. About 2-4 minutes. Next add the kale, garlic, pepper and chili flakes. Continue cooking for 15 minutes until kale becomes tender.
  3. Add the soy to the pan and deglaze any bits on the pan.
  4. When the quinoa is fluffy and tender, add it to the pan with the kale. Gently, stir to combine. At this point the salad is ready to serve. You can serve warm or chill.

Note: Add chicken or fish to this dish for extra protein. Garnish with Lime, lemon or cilantro for a bit of freshness.
